Winds, the Adriatic Sea & wild herb foraging - the perfect blend.

We love foraging for our herbs; they are plentiful and totally organic. We know the best times and the best places, and I keep the actual locations a secret.
The weather has to be right; the winds need to have been blowing but not on the days we pick, so many little things need to be in alignment for the best flavours.

Sometimes we need to move around like goats up and over rocks and climb cliffs all in the effort to find the most robust plants.
Our Locally-Foraged Produce
Wild Sage
Wild sage (Salvia Officinalis) is a herb belonging to the mint family. Widely used by the ancient Romans, it is native to the Mediterranean region.
The high levels of calcium and vitamin A in wild sage assist with cell regeneration and reducing the appearance of wrinkles. Its anti-inflammatory properties can also help to reduce swelling and puffiness of the skin, and are particularly beneficial for throat and mouth inflammation. Wild sage has antispasmodic properties which can assist with asthma, and can also be beneficial for indigestion and digestive system symptoms.

Sea Fennel
Sea fennel (Crithmum maritimum) is an edible wild plant, often growing on rocks and dunes along the Mediterranean coastline.
Sea fennel thrives where it has access to sea winds and waves, and as a result, has a slightly spicy and aromatic flavour. Sea fennel is rich in minerals and vitamins, including vitamins A and E, and is particularly well known by sailors for being extremely high in vitamin C.

Sea Fennel grows amongst the rocks above the water and offers a subtle tang to our spices.
Carob
Carob Tree (Ceratonia Siliqua), native to the Mediterranean, the ripe pods contain a sweet pulp that we dry roast and then grind to a powder.
Carob is in our Meat Rub because of its many benefits:

Over the years, friends have kindly asked relatives if I can forage in their abandoned properties for cuttings from decades-old plants. I have been able to forge new plants from cuttings and established them in our garden. Our original Rosemary plants are from the old Kojaković House in Lazine.
Kobi loves to find a nice cool spot under the rosemary bushes in summer.
